Yellow tea undergoes an extra step in the processing process, compared to the production of green tea. After steaming or stir-frying, this tea is placed on a heat source under damp cloths to get a kind of sweat process. This is what the Chinese call 'men huang' (this means yellow stewing) also known as moistheating. During this process of 'men huang', the sweetness of the tea and smell gradually become stronger. This tea is then rolled to allow the juices to come out and then dried to be packaged.
